We start in September to select the crops we think some months later they are going to offer us an exquisite olive juice
We realise a carefully harvest of the best olives from the tree, in its ideal point of ripeness during the veraison at the beginning of October. The harvest is realized by means of traditional techniques adapted to our days, treating the environment where we are placed with maximum respect and being careful not to damage neither the olive tree nor the fruit. Only few hours after the harvesting, our olives are carried to our Mill.
We obtain our first Olive Juices by means of a mechanical process of extraction at low temperatures and after the natural process of decantation during 20 days, preserving on this way its best sensitive attributes of smell, flavour and colour.
Once realized the tastings of the different lots we proceed to the selection and classification of our better Oils. For the conservation of all its characteristics and properties we store the oil in stainless steel tanks, due sealed and numbered for its control.
After rigorous controls of quality in our laboratory, the attributes of every variety are defined and the oils are bottled in exclusive packagings that our design department has created for them.
